The recipe I am about to share makes these cookies that my husband asks me to make on the daily! No jokes..
These cookies have the cutest back story to them. I told it in brief format over on IG one day, but I felt this story and these cookies needed a permanent spot here on the blog. A place for others to get the recipe and bless their bellies with the goodness that is ‘Natasha’s Cookies’.
This isn’t their real name..in fact I don’t even know what these cookies were ever called because this recipe was given to me on a sticky note from my girlfriend Natasha! Years ago we both were in the peak of our dental career. Sitting in the back tiny room, that was our staff room. I think she was on a health kick at that point, and well I am always looking for a healthy cookie that I can serve my hubs. So on a hot pink sticky note this recipe was scribbled down. I for years kept that hot pink sticky note..until it was hardly legible..so I transferred it to the recipe card labelling it as ‘Natasha’s Cookies’.
Fast forward 7 years or so..and I am still making these dang mouth watering cookies every other week. Their mouth watering goodness hasn’t changed, but those two girls in that back tiny room have! Natasha is now a world travelling yogi, who teaches retreats with her best friend Rosie all over the world! As for me, I too have changed my career, have pursued old and new passions, and am living a life I once dreamed about when I would be bent over a patient, sweating under my mask!
Life is a funny thing. It is always constantly changing, sometimes the changes are fast, others times so slow it hardly is noticeable. If there is one thing I can assure you though…is that the good that is these cookies..never ever changes!
Recipe as follows:
– 1 1/2 CUP Rolled Oats
– 1 CUP Spelt Flour
– 1/2 TSP Baking Powder
– 1/2 TSP Baking Soda
– PINCH OF SALT
– 2 TBSP Cinnamon
– 1TSP Nutmeg
– 1 EGG beat with 1TBSP water
– 1/2 CUP Apple Sauce
– 1/2 CUP Maple Syrup (or) Honey
– 1 TSP Vanilla Extract
– 1 TBSP Molasses
– Pre-heat oven to 335 degrees celsius
– Mix together wet & dry ingredients. Add walnuts, craisen, dark chocolates, almonds.
– On baking sheet place tinfoil
– Scoop cookies on to cooking shet and bake for 19 minutes
– Let cool & Enjoy
